Showered with Aloha: The Favors


Remember when I mentioned that Nicki made super yummy Pineapple Macadamia Nut Shortbread cookies as a favor for the shower? If you don't, you sure are lucky that you came across this post because I have the recipe for those super yummy cookies. If you do, you are also lucky. I mean these cookies are so damn tasty. After loving them and having more than one person ask me for the recipe I asked Nicki to send it my way and hooray for all of us, she did.

Pineapple Macadamia Nut Shortbread Cookies

2.5 cups all-purpose flour
1/3 cup packed light brown sugar
1 cup cold butter cut into cubes
1/4 cup finely chopped macadamia nuts
1/4 cup finely chopped candied pineapple 

Directions
1 - Preheat oven to 325 degrees . In a large bowl combine flour and brown sugar. Using a pastry blender cut the butter into the flour mixture until the mixture resembles fine crumbs and starts to stick together. Stir in macadamia nuts and pineapple. Form mixture into a ball and knead slightly until nearly smooth. 

Tip: It will help to knead the dough in the bowl rather than a cutting board, the sides of the bowl will help to form the dough. 

2 - Place dough into a gallon size ziplock plastic bag. Close the bag 3/4 of the way and begin to roll the dough toward the sides of the bag with a rolling pin. The goal is to roll the dough out flat so that it fills the entire plastic bag, which helps to create a uniform thickness. Once the dough is rolled out place it on a flat surface in the refrigerator for at least 20 minutes. Remove from refrigerator and peel back one side of the plastic bag. Cut dough into desired shapes using cookie cutters or slice into squares using a knife. Reroll scraps no more than once. Place cutouts/squares 1 inch apart on an ungreased cookie sheet. 

3 - Bake in preheated over for 20-25 minutes or until bottoms just start to brown. Transfer to a wire rack and let cool. 

Tips: 
- Cooking time varies depending on thickness of dough. 
- Do not try to double recipe. Make each batch of dough in separate bowls. 


Now do your mouth a favor and go make these cookies for it! I promise, your mouth will thank me. :)
